Coconut Milk and Challah French Toast

The sweetest of the coconut milk combined with coconut oil for frying makes this French toast sing without added sugar. Just top with fresh fruit, your favorite compote, or (who are we kidding) some warm maple syrup.

Ingredients
  • 8 thick slices of Challah
  • 1 cup light coconut milk
  • 2 eggs
  • 1 tsp vanilla
  • Pinch of salt
  • Coconut oil for frying
Instructions
  1. Mix coconut milk, eggs, vanilla, and salt together in a wide, but shallow dish. Make sure the break the eggs up and whisk until the mixer is thoroughly combined.
  2. Heat a frying pan on medium heat until a tablespoon of coconut oil melts and coats the pan.
  3. Place 2-4 Challah slices in your mixture. Count to 10. Flip the slices over and count to 10 again.
  4. Transfer the soaked Challah slices to the hot pan and fry for about 3 minutes per side or until a nice golden brown starts to develop.
  5. Repeat the soaking and frying with the rest of the Challah,
  6. Serve warm with your favorite toppings.
