Cardamom Berry Compote

A tangy and beautiful sauce to smother on waffles, pancakes, french toast or goat cheese costinis. Frozen fruits could be substituted, but the real deal packs a freshness that screams spring!

Ingredients
  • 1 8 oz package fresh blueberries
  • 1 8 oz package fresh raspberries
  • 2 tblsp honey
  • ¼ tsp cardamom
  • ¼ tsp cinnamon
  • Zest and juice from half a lemon
  • 1 tblsp corn starch
  • 1 tsp vanilla extract
Instructions
  1. Place berries, honey, cardamom, cinnamon, and lemon zest and juice in a sauce pan over medium high heat. Bring to a boil stirring frequently and mashing berries as they cook. Reduce heat to simmer cook for 10 minutes.
  2. Stir in corn starch and cook for 2 mins.
  3. Stir in vanilla extract.
  4. Serve warm.
